It’s been quite some time since I shared a recipe, but it’s not because I’m not cooking. I haven’t shared any recipes because I haven’t been doing my own spin on meals I prepare lately. This salad is the exception — I didn’t follow a recipe for this, I created it myself!
This Mediterranean salad is inspired by a salad my parents and I enjoyed at an Afghan restaurant we discovered last weekend. The waiter gave us each a big plate full of chopped tomatoes and cucumbers swimming in a pool of light, acidic, and tangy dressing. I’ve had a strong craving for Mediterranean food lately, so I thought it’d be fun to make it at home! Below is the recipe.
My Version of a Mediterranean-Inspired Salad (modify as desired!)
- 2 large cucumbers
- 4 small/medium-sized tomatoes
- A lot of fresh parsley
- Many mint leaves
- Several sprigs of fresh dill
- One lemon
- Apple cider vinegar (optional)
- Two garlic cloves
- Garlic powder (optional)
- 1/2 red onion
- Feta cheese
- Peel and julienne large cucumbers (the mandolin my dad got me for Christmas worked wonders for this) and put in a large bowl
- Dice the tomatoes and toss in the bowl. Try to keep the guts of the tomato intact so it can add to the dressing.
- Chop up more fresh parsley than you think you need, and add it
- Chop a ton of fresh mint
- I plucked the dill right off of the stem and threw them into the bowl…I don’t know if there’s an “official” way to prepare fresh dill.
- Squeeze one lemon over the mixture
- Option to add some apple cider vinegar as well. I would’ve added another lemon but I didn’t have any, so I used the vinegar to provide more acidity
- Mince the garlic and add
- If raw garlic is irritating to your digestive system, I recommend using garlic powder instead. I used both garlic powder and raw garlic
- Chop the red onion and add
- Season with salt and pepper to taste
- The night before you serve, or even right before you eat it, add as much feta as you would like. I added it as late as possible because I think it would dissolve into the dressing otherwise.
That’s it! It’s quite simple but so satisfying.
One more note- it’s best to prepare this at least the night before so everything can soak overnight.

My 23rd birthday was definitely one of the more epic ones!
6 November – Election Day
First of all, our campaign was victorious! It was such a great feeling, especially since it was the last day of the job. All of those long hours really paid off. We won by 53%, which makes it even crazier because if we hadn’t been campaigning, the Referendum that we were advocating for definitely wouldn’t have passed.
We all celebrated at a local bar, and my boss and my family friend kept buying everyone rounds of drinks to celebrate. Since my birthday was only a few hours away (it was the day after Election Day), my family friend kept insisting we do toasts, not only for our success, but also for my birthday. Then my boss, his girlfriend, and I went to another local bar and had a drink there. We waited until it was midnight, AKA officially my birthday, and then he got me an Uber home.
7 November – My Birthday!
The next day I was quite hungover, which was a little annoying but thankfully I wasn’t nauseous. I just had a headache from dehydration from all of the cheap glasses of wine I had consumed.
My girlfriend came by early in the day to take me to my car, which I had left at the first bar. Then I dropped the car off and we went to my favorite Thai place for lunch! Afterwards, we went to my alma mater to hang out until I went to dinner with my family.
My second favorite place to eat is a Spanish restaurant which is located where I went to school, and that is where I ate with my family! This was the third year in a row that I’ve eaten there for my birthday because the food is absolutely divine and the atmosphere is wonderful as well. My last two birthdays have been on a Monday and a Tuesday though, so they weren’t particularly lively when we went out to eat at the restaurant. This year, however, my birthday was on a Wednesday and they had live music! I love live music, so I was living it up. It was some groovy salsa band and they were fantastic!

The day after my birthday I bought these beautiful boots that I’m obsessed with, thanks to my grandparents! They’re by Marc Fisher, whom I’m only familiar with because I had purchased a pair of boots by him two years ago! Those boots are only booties though, whereas these are killer tall boots! The story behind them is pretty amusing too…
I went to DSW to search for booties without a heel because I only have one pair without a heel. I tried on about twenty pairs of booties, but I didn’t love any of them and the ones that I did like didn’t fit my feet right. They were either oddly too loose or too tight. Even my mom tried some of the booties on and noticed that they weren’t fitting properly.
After being disappointed with the booties, I decided to try on tall boots. I have two pairs of tall boots but only one of them is more “professional,” so I thought another nicer pair would be great. My mom found these and I tried them on, and it was like a Cinderella moment! The shoes fit like a glove! When I was walking around to see how they felt, a shopper stopped and stared at me and said, “Wow, those are nice boots.” Then I turned around to show her the back of the boots where the studs were, and she was pretty stunned. I then decided that those boots were mine, and I’m so glad because I love them so much!
My mom is having the bathroom redone so they turned off the water for a few hours. Thus, I took advantage of the community center yoga class and shower that day! I took a great class and then I took a nice hot shower and got super fancy for the day, including my beautiful new boots!
Then I went to lunch with a friend from high school who I hadn’t seen in over a year. We caught up at Panera, then migrated to Starbucks. My girlfriend had a job interview in the area so she came by to join us. Then we got two bottles of wine from the liquor store and took the party back to my parents’ house, where they were having their own little gathering. We all drank wine and ate my mom’s burgers and chatted, it was so much fun! Then we watched the first episode of the new Sabrina series on Netflix. Unfortunately, I don’t have a photo with my friend, but I will see her one more time before she goes back to New Hampshire!
On Saturday, my girlfriend and I went into the city! We were going to go to a museum but by the time we arrived, neither of us wanted to go. We ended up walking around to see the local sites instead.
Macy’s had already decorated the store inside and Bryant Park was bustling with shoppers at the boutiques, people dining, and ice skaters. My girlfriend wanted to ice skate but I don’t enjoy ice skating so we ate poutine with duck bacon instead. It was fun to be in such a busy and festive environment!
Then we went to the Amazon bookstore! I had been meaning to go there for a few months but I never had the chance. The Amazon bookstore is different than other bookstores because they include the star rating of the book as well as a quote from a reviewer. They also do what Amazon is famous for doing, which is suggesting books you may like based on a book you have read. For example, they had a shelf saying if you read Milk and Honey by Rupi Kaur, you may like other poetry books. Amazon’s bookstore also included some Amazon technology. It was a cool environment. I don’t believe they included book prices though…
After the bookstore, we walked to Rockefeller to check out the tree! It was also a bustling environment but it wasn’t as fun as Bryant Park was.
On Sunday, I spent my day crocheting myself a new hat! The last time I made a hat for myself was four or five years ago, but I had loomed it. You can see it in the photos of me in NYC, but below is a better picture of the type of yarn. It’s a beautiful yarn but it’s not very warm and it’s just time I made myself a new one! So I followed a tutorial on YouTube, which was surprisingly super easy, and now I have a nice new hat! I’d like to get a pompom for the top of it.
That sums up my birthday week! It was such a fun time and I’m grateful to have concluded my 23rd year on Earth, in this lifetime, with people I care about.
Now I’m back to reality, which includes finding a new job and resuming studying for the GRE. I have a new strategy for getting a job this time…I’ll talk about it more if it works out.
I’ve changed my diet a bit more since my last post, so I thought it was about time to update y’all! I have now excluded all sugar from my diet, including honey. I’ve also been eating plant-based as much as possible, with the goal of one plant-based meal per day. Usually, I eat some sort of animal protein for dinner.
Cutting out sugar has been harder than reducing my meat intake. Sugar is addictive, so the difficulty can probably be attributed mostly to that, although I do love sweets in general. Now, when I crave chocolate (yes, I’ve even reduced my chocolate intake. When I do eat chocolate, I eat 85% cacao because there is less sugar), I opt for fruit. My go-to fruits lately have been apples and grapes. I like to pair my apples with grocery store-made almond butter. They make the almond butter there for you and it’s delicious!
Overall, I enjoy eating a more plant-based diet. It feels better in my body and I get to support local farmers because I buy most of my produce from them! I’ve been using Sahara Rose’s new Ayurvedic cookbook to make plant-based meals, and they’ve been so tasty. I can talk about recipes I’ve been trying from her book another time, but I highly recommend you check out her book.
One day, I would like to be vegetarian, but I’m hesitant to do so now because over the summer I lost a couple of pounds…which isn’t bad necessarily, my weight does fluctuate a little bit, but I’m afraid I’d lose more weight by becoming vegetarian. I’m also afraid of having vitamin deficiencies. Plus I don’t want to have such a prohibitive diet because cutting out dairy and sugar are difficult enough…to exclude animal protein would be even harder. So for now, I’m just doing the best that I can to eat lots of veggies and plant-protein while avoiding sugar and dairy.

Favorite Sunscreen: CeraVe Sunscreen Face Lotion
I got this product after reading several articles about how the most common sunscreen in stores has been damaging coral reefs and it’s also not good for your body. You can look this up online for the details, but the gist is that the chemicals found in sunscreen interfere with hormones and such in your body. This sunscreen is made with zinc, which is a natural element, thus it’s better for your body and for coral reefs! What I have noticed though is that unless you make sure to rub it in, you may have some white residue on your face. Just make sure to look in a mirror before you take photos or go out haha
Favorite Lotion: Sleep Lotion from Bath and Body Works
I love Bath and Body Works! I go on a shopping spree there with my mom and sister at least four times a year so we have scents for every season. The store recently had their Biannual Rubber Ducky Sale, so I snagged this for around $5-7 whereas it’s usually around $15! While I have tried many of their lotions and scents, I think this one is my favorite and I definitely will have to repurchase. The scent is so relaxing and warm, I love it. It’s also super moisturizing! Since I’ve been shaving my legs for the summer, my legs get really raw and irritated but this lotion soothes them and locks the moisture in for 24 hours. It’s the perfect solution!
Favorite Book: Alice’s Adventures in Wonderland and Alice Through the Looking Glass
I know I listed two books but in my defense, the books were combined into one book, so, I count them as one. This series is phenomenal and incredibly thought-provoking. I purchased the edition published by Penguin and they included all these amazing footnotes that provided a ton of insight on the characters as well as the author. This makes a great summer read because it’s simultaneously philosophical and whimsical! Follow me on GoodReads if you want to link up about books!! Favorite Drink: Taco Bell’s Watermelon Freeze
This drink is iconic! It’s not too sweet in my opinion and the flavor is so tasty! The only suggestion I have for this drink is to make the sugar candies chocolate candies instead. It would be more reminiscent of Friendly’s Watermelon Roll (did anyone else grow up eating these slices of heaven???) and it would, therefore, be better overall. The chocolate would provide a beautiful contrast to the sweet and sourness of the slush. Perhaps when I get it again, I’ll add chocolate chips myself and report back!
Favorite Chocolate: Trader Joe’s Dark Chocolate Covered Ginger
I am obsessed with ginger! It’s my favorite spice. I also have a deep love for dark chocolate, which I eat daily. Two of my favorite things combined together is pure heaven! I was first exposed to this delicious dessert when my girlfriend bought me dark chocolate ginger candies to make me feel better. I don’t know if I was suffering from allergies or if I was sad, but it was one of the best treats she’s given to me and also the worst because unfortunately, chocolate ginger candies are sooo hard to find! I’ve only seen them at ShopRite where they had half the size of this container yet at the same price, and at Trader Joe’s, which is the best option for this delectable treat. I may have to make them myself, honestly.
Favorite Dessert: Trader Joe’s Gone Bananas!
I strongly advise against buying this because it will ruin you. I devour almost the whole box in one sitting, they are way too delicious. They are so good that now whenever we go to Trader Joe’s, my family buys at least four boxes. Obviously, we can make this ourselves and it’d be cheaper to do so. In fact, my sister and I did make a version of this last summer, however, we didn’t cut the bananas up into slices. Banana slices make frozen bananas less painful to eat because you are less likely to get brain freeze or feel pain in your teeth from biting into a frozen banana half. Next time I make this, I will definitely be cutting the bananas into slices!
Favorite Outfit of the Day: Tangerines!!
My sister and mom picked out this cute tangerine top from Anthropologie for me, and I love it! It’s the perfect shirt for summer because it can be worn casually or more dressy as I wore it in these pictures. I paired the shirt with fancy, woven shorts from Abercrombie I bought two years when I used to work there.
My orange earrings and bracelet (the engraving in the bracelet is a coqui) are from Puerto Rico when my mom went to visit my grandma. I think I got the goldstone bracelet during a Florida trip back when my grandparents were still alive. Lastly, the watch is a gift my mom got for me for my most recent birthday.
Those are all of my favorites for these last two months! I’d like to continue this series if not every month, at least every other month. Perhaps I can integrate some things that I got that I don’t like too! I also want to do lookbooks/OOTD pics again. I take photos for them but I haven’t posted them since like…2014/2015?

While I usually eat pretty well, I’ve refined my diet more to benefit my skin, ovulation cycle, and my body! The meals I’ve been eating have been filling and delicious, so I wanted to share them. I only included breakfast and lunch because my lunch is usually leftovers from dinner.
This isn’t just any toast- it’s toast with goat cheese! I don’t regularly eat goat cheese but since I’ve eliminated dairy from my diet to benefit my skit and ovulation, I’ve chosen not to consume cheese from cows. Thus, goat cheese has come into my life and it’s quite good! I purchased a small, spreadable one from the grocery store and it helps keep me satisfied until I finally eat lunch at noon. Goat cheese and toast was a recommended breakfast in the book I’ve been reading, Period Repair Manual by Lara Briden, because goat cheese has some protein and the toast provides carbs. I eat some berries (and take some to go!) to make things a little more tasty.

I also make some chai in the morning in lieu of coffee so I avoid the caffeine-jitters. The chai I make is from an Indian store and my girlfriend taught me how to make it. It is my absolute favorite morning beverage, aside from coffee, because it is spicy and flavorful. Lately I’ve been adding almond milk to it and a teaspoon of honey. Sometimes I add a teaspoon this rose syrup too, also from an Indian store. It has a flowery taste and it’s quite delicious! I find it important to note that any form of corn syrup is not an ingredient in this syrup, instead, the main ingredient is sugar.
Lunch at Noon:
Most of this stuff were leftovers from the dinner my mom had made the night before. Not all of my food is visible but inside this container is salmon, cod, fried eggplant, potatoes, arugala salad, green peppers, and tomatoes. It all can be eaten cold, which makes things more convenient.
To ensure I get sufficient carbs in my diet, I also bring rice that I make.
This is the rice that I prepared the night before to bring for lunch. It is a recipe my girlfriend taught me and it is my favorite food. It’s soooo good because it’s so flavorful and satisfying! I didn’t have all the necessary ingredients to make it correctly so I had to improvise a bit, but it is still delicious and easy to make.
For this version of my girlfriend’s recipe, I sauteed some chopped yellow onions and cumin powder in a pan of hot olive oil. Then I added the soaked and rinsed Basmati rice and water. After that, you just let the rice boil and the water evaporate!
These meals are satisfying and delicious, which has been great since I’ve been expending a lot of physical energy during my training.
What do y’all eat when you are working out or you spend a whole day adventuring/traveling?
I recently made a salad inspired by a recipe from the Yoga Journal, and it was great! I have mixed feelings about salad because at least when I make it for myself, I don’t feel like I have the greatest skill at combining ingredients that go well together. Therefore, salad recipes, albeit simple, are helpful to me. As per usual with the recipes I prepare, I didn’t have every ingredient required, so I had to improvise. The results were still great though!
I didn’t measure anything for this recipe so I just threw a couple of handfuls of arugula in a bowl and I added a quarter of an avocado, because I had eaten most of it the previous day. Then I added chopped walnuts, raw sunflower seeds, the rest of the parmesan that I had, and a chopped tomato. Lastly, I squeezed half a lemon, drizzled olive oil, added a bunch of black pepper, and a pinch or two of Kosher salt.
That was it! It was super simple and it had flavors that I usually don’t add to my salad unless I’m at a salad bar or if the salad is made for me.
Some of my go-to salad ingredients are canned beets, canned mandarin slices, craisins, and red peppers. Clearly, I like sweet salads.

Last year when I went on a 5-month hiatus from my blog because I was struggling with grief and depression, one of my best friends from my hometown recommended I Bullet Journal to help me deal with my emotions.
For those of you who don’t know what a Bullet Journal is, it’s a method of organization for a ton of different things such as daily to-do lists, mood tracking, gratitude lists, etc. There is an official journal you can buy, or you can use whatever journal you have, you can even create your own with scrap paper!
I personally used a random notebook for my BuJo, and I used it quite a bit for several months until I finally returned to my online blog. It never became the cutesie journals that you will find online if you search “Bullet Journal ideas” in Google Images because I just used different colored pencils and pens to create lists. Regardless, it helped me get through a difficult time, thus I am picking it up again! This time, I’m going to use it to help me keep track of my finances. (I’m also not using it in lieu of blogging.)
As I’ve mentioned previously, I have been a bit stressed out about money. Although I am making a small income, I somehow spend outrageously every month. The months leading up to graduation were particularly expensive due to many nights spent celebrating and…honestly I don’t know what else.
Anyway…I was inspired to pick up my BuJo again because in my email inbox recently, there was a message about Bullet Journaling and Finances. Intrigued, I clicked on it and read a helpful article about how someone used the Bullet Journal to get out of a $240K debt! Thankfully, I don’t have such a large task to tackle; I want to save more money, spend less, and budget.
After reading the article, I adopted two of the prompts that the writer of the article, Seth, used! Below is my version of what he had done.
The prompt above is to track my everyday purchases and my income. This will help me determine what I need to scale back on so I can save more money. Off the top of my head, I suspect that I spend a lot of money eating out and on alcohol. I also spend quite a bit doing spontaneous shopping on Amazon (books are my greatest weakness!!) and at the mall for yoga items (speaking of which, there will be another yoga haul soon!).
This second prompt I copied is a habit tracker for the month of June. All the days of June (except the 29th and 30th…I ran out of room) are included as well as the day of the week. The vertical column consists of habits that I want to break and make. For example, I want to read at least 20 pages of either one or of multiple books per day because I have a bunch of reading to do for the yoga training as well as a huge pile of half-read books I’m dying to finish. For some reason though, I always get caught up on YouTube or reading different lifestyle blogs, which is better than YouTube I suppose but I would prefer to finish a book.
Other habits I want to create that would help me achieve my long-term goals include researching PhD programs, applying to at least two jobs/day, meditating with my mala, writing, studying (for yoga/GRE), doing yoga, 10 minute cardio, save $20, clean/organize 5 items in my room, not spend money, and research a car to get. Some habits I would like to break include not buying coffee, not buying alcohol, and not buying food (unless it’s from a grocery store).
When I do a habit I want to create, I will put a smiley face on the date. When I don’t do a habit I want to create, or when I do a habit I want to break, I will put a frowny face.
I have many habits in the vertical column, so I don’t expect them to do them daily; however, I hope this tracker will encourage me to practice these habits more frequently than I have been. Currently, I’ve been avoiding many of these tasks and I expect this tracker will help hold me accountable. This will ultimately help me achieve my long-term goals!
At the end of June I will update y’all on my progress with this.

My typical breakfast consists of a delicious bowl of Cheerios swimming in milk. I’ve since upgraded to various Cheerio flavors such as the Limited Edition Banana Nut Cheerios (RIP, I hope they revive it!!) and Peach Cheerios. I’ve also upgraded from skim milk to non-dairy options like rice or almond milk because I’ve learned that dairy contributes to many of my acne issues, among other things.
Anyway…since I’ve moved back to my parents’ house, I haven’t had to cook or prepare meals for myself as much as I was doing in school. The only meal I have to prepare nowadays is breakfast, if I even wake up early enough for it. Well, I’ve finished the cereal at home and I haven’t bought more yet so on Monday I decided to check out my latest favorite recipe website, The Minimalist Baker! I made their golden milk smoothie and I wanted to share how I modified it and the results!
First though, I just want to say that this is inspired from Golden Milk Tea, also known as “Haldi Doodh” in Hindi which translates to “turmeric milk.” I’ve made turmeric milk before because it is supposed to help with menstrual pain, which I’ve been having quite a bit of since quitting the pill in April. It is quite effective in my experience so if you want to try it yourself, the recipe is very similar, minus a few ingredients that the smoothie calls for.
The smoothie calls for a frozen banana, coconut/almond milk, ground turmeric, fresh ginger, ground cinnamon, black pepper, and ground nutmeg. It’s optional to add ground clove and cardamom and fresh carrot juice, but I didn’t have any of those. You can also top the smoothie off with hemp seeds, but I didn’t have those either.
This is what I did have! (Not pictured is the almond milk)
I used one banana, although it wasn’t frozen so I added three ice cubes to the blender. Then I eye-balled the rest of the ingredients based on how much I like them. For example, I added about one dash of nutmeg because nutmeg is very strong so I don’t want it to overpower the drink. Conversely, I added three dashes of cinnamon because I love cinnamon. I was also a bit generous with the fresh ginger and black pepper because I love those ingredients!
The recipe didn’t call for chia seeds but that’s what I had so I blended it in too!
I made the smoothie again on Tuesday but this time I added fresh mango because I have a lot of it left to eat and I was hoping it would make the smoothie more golden. I feel like I ended up with a grey-ish, green smoothie though…
It was delicious regardless though! I enjoy this recipe because it can be as sweet or as spicy as you want it, plus it’s a great way to start the day…probably better than Cheerios.

I just had my first midterm this semester and I think I bombed it, which is depressing. I had a nice lunch with my girlfriend afterward though and now I’m in my room relaxing before I pick her up to go to Trader Joe’s. A Trader Joe’s just opened in the area and we went once already a couple of weeks ago but we’re going to go again today. After that, I’m going to do some work around the apartment like do laundry, sanitize my room, finalize my resume and apply for some jobs, and study for my last midterm on Friday. I’m less stressed about it but I have a ton of preparation to do still.
Anyway…I’m considering seeing my therapist again because I’ve been feeling a little depressed. I’ve unfortunately been taking it out on my girlfriend a lot as well as my family…but she suffers more because I’m around her more frequently than I am with my family. It’s not fair to her and I don’t like constantly picking fights with her because I’m in a bad mood. I’ve been doing several things to take care of myself such as yoga, cooking, and writing…perhaps I don’t need more outlets though…perhaps I need to do more professional and future plan-related development. I’ve done a ton of that but I feel like it’s been futile so…I feel stuck.
Anyway…let’s talk about food!
The first dish I made with my girlfriend, and it’s pizza! We made this over the summer, in late August. We made several errors here…one is that we used way too much dough for the small pizza tray we had, and ended up with deep-dish style pizza. I don’t quite remember what we put on the pizza…she did most of the work. I was doing a puzzle but she added mushrooms, jalapenos, three or four different cheeses, pepperoni…spinach probably…onions…yeah it was intense. The toppings were great but because she added so many of them and because there was too much dough, the toppings all fell into the center. I think the pizza would’ve been better if we executed the dough part better.
The next two pictures are two different adaptations of tomato sandwiches. My family friend’s mom grows tomatoes so he brought some over and my mom decided to make tomato sandwiches to really savor the freshness of them. Tomato sandwiches consist of toasted bread, a thin layer of mayo on both sides, fresh torn basil, and then the tomatoes! it’s super easy and it really highlights the deliciousness of the tomatoes. The first version is with Italian bread, which is great but cuz it was so crusty, the tomatoes slipped out. The sliced bread was better because the tomatoes stayed inside. When I went back to my apartment, I made another variation (not pictured here) with sliced and toasted wheat bread, butter, dried basil, and then the tomatoes. It was good but it’s definitely better with at least fresh basil.
The other pizza photo is a grilled pizza my mom makes on the grill. Making pizza this way has become popular but my family swears she came up with it first. But yeah…it’s super delicious.
The first pasta dish is penne with butternut squash from the In the Kitchen Food Network app. I never cooked with butternut squash before so I was excited to try it, especially because I know I enjoy butternut squash.
I had to peel and cut the butternut squash, which was kinda difficult because it’s hard like cutting a raw potato. I won’t be making butternut squash a regular part of my diet just because the preparation takes too long. Anyway…this dish includes the butternut squash, cremini mushrooms, black pepper, fresh garlic, red onion, red pepper flakes, parmesan, and oregano.
My mistake here was using shitake mushrooms instead of cremini. Shitake mushrooms, which I’ve never cooked with before, are super smelly and cooking them was incredibly unpleasant. I feel like if I used a less stinky mushroom, such as the one they suggested, I would’ve enjoyed this dish more. Otherwise, I loved this dish because it’s seasonal and overall, pretty simple. I served this dish with a side of fresh tomatoes and sauteed spinach.
I didn’t make the next plate that I pictured. It’s actually from an organic made-to-order cafeteria on campus. They use a ton of vegetables, lean meats, and different sauces. One of my favorite sauces is raspberry jalapeno. The one pictured here is papaya lime.
The next two pictures are of an omelet I made. I really enjoyed the flavors so I took a photo. Plus, I’ve been making perfectly round omelets! The omelet ingredients I chose were pepperoni (leftover from the pizza), red onions (leftover from the penne dish), and the stinky shitake mushrooms, also leftover from the penne dish. The odor was unpleasant but it tasted delicious, especially when topped with feta which melted a bit, so good!
Some of the next dishes were brought to you by the local farmer’s market that comes to campus! Unfortunately, last week was the last week of the farmer’s market. I love the farmer’s market because it entices me to try new vegetables and I like supporting local farmers.
The first meal I made with ingredients from the market was simple and also from the app. I got okra and sauteed it with fresh tomatoes I still had from my mom’s friend, garlic, salt and pepper, and a splash of cider vinegar. I put it over pasta to make it a meal and damn, it was tasty. I love okra because it’s slimy, but I don’t eat it as frequently anymore. I will definitely have to change that because it’s easy to prepare and cook, and it’s healthy too!
The waffle ice cream is a dessert I made with my girlfriend in the dining hall. I just thought it looked nice.
The next dish in the pan is white eggplant I got from the farmer’s market sauteed with fresh tomatoes. (I had a ton of tomatoes for awhile). I splashed some balsamic vinegar in there and it was good…white eggplant didn’t seem incredibly different to me than purple eggplant except the skin is tougher.
There is another waffle ice cream….lol they’re soooo good!
The dish after that is pho I prepared in the dining hall at school. I love pho and there’s an authentic place down the street that makes it but I never go…but the dining hall does a pretty decent job. I get chicken and chicken broth and either sweet potato noodles or some other type of noodle…and then I season it with lime wedges, fresh jalapeno, lots of bean sprouts, and whatever else they have. I enjoy the crunch of bean sprouts and the contrasting flavors of jalapeno and lime…it’s so damn tasty.
The next meal I made included banana peppers from the farmer’s market which I stuffed with sausage, bread crumbs, egg, parmesan, and seasonings. I then cooked it until golden and served with homemade tomato sauce I made probably a couple of months ago.
My mom made homemade mac and cheese and then baked it at the end…so delicious. I shall make it myself one day but experiment with cheeses and flavors.
The next meal is a sweet potato I seasoned with honey, olive oil, salt and pepper, cinnamon, and a dash of nutmeg. I baked it until it was soft.
The last photos pertain to an old family classic dessert my mom makes for me, but this time I made it myself! As you can see, my girlfriend and I have hoarded many apples from the dining hall. The dessert I made with the apples is called apple crisp. I made it by peeling the apples, slicing them thinly, and then seasoning them in a bowl with cinnamon and a dash of nutmeg. Then I put the mixture in a glass baking pan. Next, I made the topping which consists of brown sugar, raw oats, flour, and tons of butter. After I mixed it up, I spread it over the apples and then put the entire thing into the oven to bake. Then you eat it when it’s warm and serve it with ice cream!
The next couple of things I’m going to make are from the farmer’s market too! I am going to make a dish with celeriac and poblano peppers. I’m also going to try making ginger tea with fresh ginger. I’ve learned that I greatly enjoy ginger but I’ve never really had it fresh, so I’m excited to try it!
My favorite professor in my department was talking about discernment yesterday during class. She said that crying is part of that process because crying is literally washing the eyes so you can see clearer. It’s also a bridge to your subconscious, which enables you to discern “what feels right to you,” as Audre Lorde says.
I’ve been crying a lot but I’ve been primarily dismissive of myself when I do cry by thinking that I need to get over it and that I need to get it together…I want to discern what feels right to me without doing the work for it.
